In a sauce pan, bring water to boil. Add the chicken breast and let it simmer for 30 min, stirring occasionally.
Once the chicken is tender take it out and let it cool. Use a fork or your hands to shred it.
Strain the liquid if needed to get a clear broth.
Bring the broth back to a boil in a large pot. Add the shredded chicken, onions and carrots along with the coconut milk, turmeric, garam masala, red chili powder, cumin powder, coriander powder, crushed black pepper and salt. Stir well and simmer for 10 minutes.
Season with salt.
Garnish with coriander.
Ladle into a bowl and serve it immediately.
