Chicken Soup

Ingredients
  

Marination

  • 1 pound Chicken Breast with rib meat
  • 3 Garlic Cloves ground into a paste
  • 1 tsp Garam Masala
  • ½ tsp Turmeric
  • 1 tsp Red Chilli Powder

Soup

  • 2 Carrots cut in strips
  • 1 small Onion chopped
  • 1 cup Coconut Milk
  • 1 tsp Garam Masala
  • ½ tsp Turmeric
  • 1 tsp Red Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tsp Coriander Powder
  • 20 Black Pepper ground
  • Salt to taste
  • Coriander to garnish

Instructions
 

Marination :

  • Make few slits on the chicken breast. Add garam masala, turmeric, red chilli powder and garlic. Rub the chicken all over with spices. Cover and let it marinate in the fridge overnight.

Soup

  • In a sauce pan, bring water to boil. Add the chicken breast and let it simmer for 30 min, stirring occasionally.
  • Once the chicken is tender take it out and let it cool. Use a fork or your hands to shred it.
  • Strain the liquid if needed to get a clear broth.
  • Bring the broth back to a boil in a large pot. Add the shredded chicken, onions and carrots along with the coconut milk, turmeric, garam masala, red chili powder, cumin powder, coriander powder, crushed black pepper and salt. Stir well and simmer for 10 minutes.
  • Season with salt.
  • Garnish with coriander.
  • Ladle into a bowl and serve it immediately.
