Carrot Noodle Stir Fry
This Spiralized Carrot Noodle Stir Fry is a quick, healthy and delicious meal.

Salt as per taste
Instructions
Using a spiral vegetable slicer, spiralize carrots.
Heat oil in a skillet over medium heat. Add the ginger and stir-fry until aromatic.
Add peppers, carrot noodles and cook, stirring frequently, until softened.
Add in soy sauce, vinegar, sriracha and toss everything together with a pair of tongs for 3-4 minutes. Season with salt.
Remove to a plate and sprinkle chopped scallions, peanuts and sriracha if desired.
Serve hot!
Notes
If you do not have a spiralizer use a potato peeler instead. The noodles may be different but the taste will be the same.
