Roasted Chicken Pizza
What do you do when it is wifey dear’s birthday and you are forced to change your carefully laid plans? The answer is to take your wife shopping, get her favorite dish for dinner and most importantly pray to GOD that she isn’t too mad at you. In my house PIZZA is the magic elixir, which gets me out of sticky situations like this. This time it was this rich, creamy roasted chicken pizza, which did the trick. Who would have thought that a pizza would save you from impending doom.. err I mean an angry wife (LAUGHS!!!!)
Originally the plan was to dedicate the entire weekend to wifey’s birthday celebrations. If that meant I do not get to post on the blog then be it. With that in mind I had laid out things perfectly in my mind for the big day; a trip to the Tulip festival, a little shopping (more likely to be a lot), dinner and ice cream. But a combination of bad weather and a couple of other things (psst my work!!!) put a damper on these carefully laid plans. Needless to say wifey was indeed disappointed. But I still had a chance to make things better, an ace hidden away in my sleeve.
First part of the plan was obviously a movie and a shopping trip. Fortunately for her but unfortunately for me (CHUCKLES!!!) we live quiet close to the NORTHEAST MALL. Maddy was in the mood for something light and romantic, mostly a rom-com. We did not find something like that so we ended up watching ZOOTOPIA instead. She enjoyed it a lot more than expected which was a good start for me. Next came the dreaded shopping. But I endured it (LAUGHS HARD!!!) and got her back home in a pleasant mood.
Now it was time to put the cherry on top of the ice cream so to speak. Fortunately for me, Maddy is a real softie when it comes to certain things; especially pizza and ice cream. So I knew I had to make a PIZZA. This was when my shiny new toy, a new cast-iron skillet turned out to be my inspiration and the idea of making a pan-roasted chicken pizza instantly popped up in my head.
I believe marination always makes chicken better. So I whisked together a quick marinade of yogurt, ginger garlic paste along with a bunch of spices like coriander, turmeric, garam masala, red chili powder and lemon juice. I left the chicken pieces sitting in the marinade in the fridge for about an hour.
I used this downtime to go out and get ice cream and a couple of other necessary supplies. With the marination done it was time to pull out my baby; my cast-iron skillet. Once the skillet got hot I had the chicken pieces sizzling on it in no time.
TIP: Before pan-roasting the chicken do drain off the excess marinade.
Now that the star of the show was cooling his heels in the bowl it was time to focus on his sidekicks.
First up was the sauce. Time was off the essence here so I went with the tried and tested sauce instead of experimenting with a new one.
The tomato sauce is the same recipe that I used for my Paneer Pizza.
Saute the onion and garlic in a pan for a few minutes till golden. Transfer it to blender and make a paste with a little water. Then cook this paste with the tomato puree, fenugreek leaves (optional) and black pepper. Season with salt. Cool.
I was thanking my lucky stars for a good friend of mine who gave me a fool-proof pizza recipe. It is the same recipe that I used for my Spinach, Tomato & Onion Pizza. Make the pizza dough and then turn the dough out on a lightly floured surface and stretch to desired thickness.
Now it was time to get the show on the road. Time to assemble the pizza.
Prick the pizza base with a fork to avoid bursting up. Evenly spread the tomato sauce. Top with roasted chicken pieces, onions, green peppers and mushrooms. Sprinkle cheese over the top. I added an extra sprinkling since the missus absolutely loves it. Bake in the oven at 400 F for 20 mins until crust is golden brown. Slice and enjoy.
With great trepidation I took the steaming hot pizza out of the oven, cut off a slice and offered it to Maddy. This was the moment of truth. I was either going to be released on bail or given the death sentence. She took a bite of the pizza and had such a satisfied look on her face that I knew I had gotten out of jail on this one. Ice cream for dessert was not that shabby either.

Roasted Chicken Pizza
Ingredients
Pizza Crust
- 2 cup All Purpose Flour
- 1 ½ tsp Yeast
- 1 tsp Sugar
- ½ tsp Salt
- ¾ cup Hot Water
Marination
- 1 lbs Chicken boneless skinless thighs
- 1 cup Yogurt
- 1 tsp Ginger Garlic Paste
- ½ tsp Coriander Powder
- ¼ tsp Turmeric
- ½ tsp Garam Masala
- 1 tsp Red Chili Powder
- 1.5 tbsp Lemon Juice
- Salt
Sauce
- ½ cup Tomato Puree
- ½ large Onion Chopped
- 2 Garlic Pods
- 1 tbsp Dried Fenugreek Leaves/Kasoori Methi Optional
- 14 Black Pepper crushed into powder
- Salt
Toppings
- Green Pepper cut into strips
- Onion cut into strips
- Mushrooms
- Mozzarella Cheese
- You can add any toppings of your choice
Instructions
Pizza crust
- Dissolve the sugar in hot water and add yeast into the mixture. Mix and set aside for 10 mins till the yeast starts to bloom.
- Mix the flour and salt. Add the yeast to this mixture and knead slowly to form soft dough.
- The key to making a great crust is the proper kneading technique. The technique is folding and kneading with the heel of your palm till the dough is smooth and elastic.
- Apply oil on the dough. Cover with plastic wrap and leave it in a warm place to rise for 45 minutes.
Marination
- Whisk together yogurt, ginger garlic paste, coriander powder, turmeric, garam masala, red chili powder and lemon juice in a bowl. Cut the chicken thighs into small pieces and add to the above mixture. Cover and let it marinate in the fridge for an hour.
Roasting chicken
- Heat a skillet over medium heat. Then cook the chicken in batches till each side is golden brown and cooked through.
Sauce
- Heat oil in a pan, add onion and sauté till golden. Add garlic and cook for few minutes. Transfer it in a food processor and make a fine paste using little water.
- Add oil in a non-stick pan and cook the onion garlic paste for 5 to 7 minutes. Add tomato puree, fenugreek leaves, black pepper powder and sauté till oil starts separating, Season with salt. Keep aside to cool
Pizza
- Turn the dough out on a lightly floured surface and stretch to desired thickness. Prick the base with fork to avoid bursting.
- Evenly spread tomato sauce. Top with roasted chicken, onion, green peppers and mushrooms. Sprinkle cheese over the top.
- Bake in the oven at 400 F for 20 mins until crust is golden brown.
- Slice and enjoy.
