Mexican Pani Puri
What is a poor husband going to do if his wife becomes obsessed with a particular recipe?? The answer is absolutely NOTHING, NO BUENO, NADA. He has only one option i.e. to keep eating the same dish over and over till the missus either gives up or perfects the recipe. This is what yours truly had to go through for the past few days (LAUGHS!!!). Luckily my mother-in-law ran in to my rescue and the end result is crispy, homemade puris. These were just perfect vessels for my Mexican Pani Puri with Avocado Salsa.
A person born in Mumbai will tell you that chaat does become an indispensable part of your life. There is nothing in this world quiet like eating chaat at a roadside stall with your friends or enjoying the same chaat and ice cream at the beach with your family. Wifey dear is no different and absolutely adores all the different types of chaat she can find. But I know for a fact that Pani-puri is something which holds a special place in her heart. This dish is made up of crispy fried puris filled with a variety of different fillings usually topped with tamarind water.
Ever since I started this blog I have gotten into the habit of making things from scratch which is not a bad habit to have. The problem is even good things can somehow come back and bite you in the rear end (CHUCKLES!!!!). What happened was wifey wanted to make those puris at home and it seemed that every time she tried, a new problem cropped up. The good thing was she wasn’t going to give up trying, but the bad thing was I had to eat puris for days (LAUGHS!!!). Luckily for me there was a knight in shining armor who was watching my back i.e. my Mother-in-law. The first attempt with her recipe turned out to be a resounding success.
The puris which I have been eating for the last 2 months (wifey is going to kill me when she reads it.) involved semolina in some form of the other and never seemed to work. My mother-in-law it seemed did not get the memo from wifey dear because the recipe she suggested did not involve semolina at all. Instead it used a combination of 3 different flours; rice flour, wheat flour and AP flour.
Combine rice flour, wheat flour, all purpose flour and salt. Add water little at a time and mix. Knead slowly to form a semi stiff dough.
Heat oil on a high heat. Divide the dough in equal parts. On a floured surface hand roll one of the parts in a thin circle with rolling pin. With a cutter, cut out circles in the dough. Remove the extra dough and add it to the unused dough.
Gently slide 3 to 4 puris into the hot oil in a frying pan. Press each puri with slotted spoon till they puff. Carefully flip them over. Fry till golden brown and crisp. Drain on absorbent paper.Repeat with the remaining dough.
One bite of the hot, crispy puris taught me an important lesson; never doubt your mother-in-law. What she says WORKS!!!! (LAUGHS!!!). The puris were made so it was MISSION ACCOMPLISHED for wifey dear. All that was left to do was the filling and I was happy to oblige.. My mind was set on stuffing these puris with an avocado salsa to create an INDO-MEXICAN fusion snack. All that needed to be done was to chop the ingredients and mix them up. Refrigerate for an hour or overnight would be much better since salsas taste much better the longer they are left…
To assemble this delectable snack simple tap the top of puri with tip of spoon or index finger to make a small hole and spoon some salsa inside.
Pop in your mouth immediately. The fun part is making sure you pop in those puris whole.. If you can’t do it then the only option is TO STRETCH YOUR JAWS A BIT MORE!!!!! (CHUCKLES!!!)

Mexican Golgappa
Ingredients
Puri
- ½ cup Rice Flour
- ½ cup Whole Wheat Flour
- ½ cup All purpose flour
- ¾ cup Water
- Salt
- Oil for deep frying
Salsa
- 2 Avocados diced and mashed
- 2 Tomatoes diced
- ½ Onion diced
- 1 Jalapeño
- ½ cup Frozen Corn
- 2 tbsp Lemon Juice
- ¼ cup Cilantro
- 1 tsp Chat Masala
- Salt to taste
Instructions
Salsa
- In a large bowl mix all the ingredients mentioned in the above list and keep it in a refrigerator for an hour or overnight which would be better.
Puri

- Drain on absorbent paper.
- Repeat with the remaining dough.
Assembly
- Lightly tap the top of puri with tip of spoon or index finger to make a small hole.
- Spoon some salsa inside.
- Pop in your mouth immediately.
Had some left over puri from the chaat party we had on new year. Made this mexican puchka today. Kids loved it so much that they skipped the dinner. I was happy that the stomachs were full. Thanks for the recipe Rahul. I even shared it with my sister in Kolkatta, she’s gonna try it on the weekend.

No paani? Its not at all gol gappa 😀 may b you could twist n turn the recipe around a bit more with mil’s help and do something like vodka pani or orange paani

I realized early on that a HAPPY WIFE IS A HAPPY LIFE. So it was a no-brainer to oblige her and combine two of her favorite ingredients; chaat and guacamole.. 🙂

Haha…loved the poor hubby tale….You could also try adding semolina or rawa to the dough this gets them to be hard and crispy like the puris you get at the roadside stalls.
The avo salsa is just perfect . Love all the pictures especially the last one with the cars. Lagta hai roadside pe baith ke kha rahe hain.

We tried with the semolina Sharvari but for some odd reason it just did not work. Also I must say who else but a Mumbaikar could understand the exact reason for taking the pictures.. 🙂 That feeling of eating chaat by the roadside with friends is something you miss a lot after leaving India..

Puri is my favorite Indian bread!! My family HAS to have them every time I make Indian at home. Never thought about filling them with something but this avocado salsa is perfect! Can’t wait to make them for football parties 🙂
