Instant Kesar Shrikhand made with Greek Yogurt – A childhood Favorite
I am a firm believer in the fact that no matter where you go or what you do, one should always make it a point to enjoy the simple pleasures in life. Yes!! y’all heard it right.. It is the very same person saying this who loves nothing more than twisting his recipes left and right (LAUGHS!!!). Ironic.. Isn’t it.. But there comes a time when you can’t help but crave the simple food you ate as a kid. For me it was this smooth, rich and yummylicious Instant Kesar Shrikhand made with Greek Yogurt!!!
Childhood Favorite !!
Shrikhand basically means strained yogurt which has been fortified with a variety of flavoring agents and is a staple in every household in my home state of Maharashtra. It has a semi-solid consistency and is usually served chilled which makes it the perfect ending to a spicy meal. It is so beloved, especially by the kids that I can dare y’all to find a kid who doesn’t love it (LAUGHS!!!). For me there was no better feeling than to lick the vessel clean with my fingers after I have finished eating the shrikhand (CHUCKLES!!). It is the perfect summer dessert which has the added bonus of being easy to make in a ton of different flavors.
How to make Kesar (Saffron ) Shrikhand??
Speaking of summers the mercury has been rising here in Birmingham for the past few weeks. So the time was right to make a dessert. At the same time I had spent a little extra money and had gotten my hands on saffron (kesar); one of the more expensive ingredients in the world (WINKS!!). Having never worked with saffron before I was in a bit of a quandary as to use it. If I find myself in a pickle like this then I always turn the clock back to my childhood memories. A quick flashback revealed the solution to my problem which was this Kesar (Saffron) Shrikhand. I decided to give it a little more flavor by adding one of my favorite spices i.e. green cardamom.
Shrikhand made with Greek Yogurt
Add the saffron to the milk and keep aside.
Take a muslin cloth/handkerchief and spread it on a bowl. Pour greek yogurt onto the cloth and tie it up. I simply left it to drain for a couple of hours. Being the impatient guy that I know I am I took the easy way out by simply squeezing out as much liquid as I could. Transfer the yogurt to a deep bowl. Add sugar, cardamom powder as well as the saffron milk and whisk well until sugar is dissolved and yogurt becomes smooth and creamy. Garnish with almonds or any other nuts of your choice. Chill this Kesar Shrikhand for an hour before serving.
TIPS for making Shrikhand!!
- Use plain whole milk Greek yogurt for the best consistency.
- Make the shrikhand a day in advance and let it chill in the refrigerator for a thicker much nicer consistency.
Can I Make Shrikhand Using Regular Yogurt?
Yes, you can make shrikhand using regular yogurt too. Simply strain the yogurt much longer (5-6 hours) to take out the excess water and then follow the steps mentioned in this recipe.
Variations
There are many different variations. The popular one is Mango Shrikhand and Kesar Pista Shrikhand. I loved making Apple Shrikhand. You could even try making it with other fruits like strawberry, blueberry
Serving Suggestions
The traditional way to serve shrikhand is with meals as a dessert or with puri Shrikhand Puri. If you want to get really creative with it then try the Kesar Shrikhand Golgappe .

Instant Kesar Shrikhand made with Greek Yogurt
Ingredients
- 900 gm Greek Yogurt
- 1 ½ cup Sugar
- 2 tbsp Milk
- 2 Generous Pinches of Saffron
- 10 Pods of Green Cardamom open up the pods and crush the seeds to a fine powder
- Blanched almonds for garnishing Optional
Instructions

- Add the saffron to the milk and keep aside.
- Transfer the yogurt to a deep bowl. Add sugar, cardamon powder as well as the saffron milk and whisk well until sugar is dissolved and yogurt becomes smooth and creamy.
- Garnish with almonds or any other nuts of your choice. Chill for an hour before serving.
Rahul, you’re so right that the simple tastes from our childhood are necessary in our adult lives. But I think it’s the joy from those simple tastes that gives us the courage to change up a recipe as we learn to cook! Because we know that good ingredients lead to awesome flavor, so why not change it up?

It’s such a simple recipe. The combination of yogurt and saffron is special. I can’t wait to make this for my family this weekend. However, it’s quite hard to find Green Cardamom. Can I use ginger for the replacement?
I think ginger is going to be way too strong to use as a replacement Sheila. If you do not have cardamom then just leave it out and simply make saffron shrikhand which is pretty delicious on its own..

Is it ok if I replace Greek Yogurt with normal Yogurt because it’s hard to find Greek Yogurt in my place?

You can definitely use normal yogurt in this recipe Lucy. Make sure you squeeze all the water out before..
Is shrikhand same as milk pudding? I love that bright yellow colour.
I guess you can call it one.. As for the color then it took one expensive ingredient to get it.. 🙂
