Chicken Soup
It has been quiet cold here in Dallas the last few days. Mix in one full day of rain and it becomes a combination that I absolutely dislike. On such dull depressing days I just want to come home and have a steaming hot bowl of soup waiting for me. If that rich luscious soup is an opulent meal all by itself then I am definitely in food heaven. This sumptuous chicken soup fits this description perfectly, is easy to make and will warm your heart instantly.
Usually at the beginning of the week I have at least an idea of the recipe I am going to post on the blog. But things were pretty topsy-turvy this week. Not only did I not know about the blog post but a couple of friends were coming over for dinner on Saturday. So there was immense pressure on me to come up with a couple of good recipes (LAUGHS!!!!). In such a situation there was only one person I could turn to even if she is sitting 7000 miles away in Mumbai, India. MOM!!!!! And sure enough she did not disappoint.
I had promised my friends who were coming over for dinner that I would make dishes unique to my hometown. When I asked Mom for advice about a couple of recipes that I had in mind she also talked about a variation of one of those recipes in particular which could be made into a soup. VOILA!!!! Just like that I had a menu for the Saturday night dinner as well as a recipe for the blog. So kids everywhere, here is a piece of advice from this 32 year old kid (CHUCKLES!!!) Always listen to your mom…. You will get out of sticky situations in good shape.
This is actually my mom’s own recipe that I have modified just a bit. So I hope I have done it justice…
For me the basis of any good chicken dish is the marinade since it goes a long way in enhancing the flavor of the dish.
Make few slits on the chicken breast. Add garam masala, turmeric, red chilli powder and garlic.Rub the chicken all over with spices. Cover and let it marinate in the fridge overnight.
In a sauce pan, bring water to boil. Add in the chicken breast and let it simmer for 30 min, stirring occasionally.
Once the chicken is tender, take it out and let it cool. Shred it with a fork. Also by now it is so tender that it will come apart in your bare hands. Strain the liquid if needed to get a clear broth.
Bring the broth back to a boil in a big pot. Add the shredded chicken as well as the carrots and onions. Now it is time to enhance the flavor of the soup. So mix in the coconut milk, the dry spice powders and salt. Stir well and simmer for 15 minutes. Garnish with coriander.
Ladle into a bowl and serve it immediately.

Ingredients
Marination
- 1 pound Chicken Breast with rib meat
- 3 Garlic Cloves ground into a paste
- 1 tsp Garam Masala
- ½ tsp Turmeric
- 1 tsp Red Chilli Powder
Soup
- 2 Carrots cut in strips
- 1 small Onion chopped
- 1 cup Coconut Milk
- 1 tsp Garam Masala
- ½ tsp Turmeric
- 1 tsp Red Chilli Powder
- 1 tsp Cumin Powder
- 1 tsp Coriander Powder
- 20 Black Pepper ground
- Salt to taste
- Coriander to garnish
Instructions
Marination :

Soup
- In a sauce pan, bring water to boil. Add the chicken breast and let it simmer for 30 min, stirring occasionally.
- Once the chicken is tender take it out and let it cool. Use a fork or your hands to shred it.
- Strain the liquid if needed to get a clear broth.
- Bring the broth back to a boil in a large pot. Add the shredded chicken, onions and carrots along with the coconut milk, turmeric, garam masala, red chili powder, cumin powder, coriander powder, crushed black pepper and salt. Stir well and simmer for 10 minutes.
- Season with salt.
- Garnish with coriander.
- Ladle into a bowl and serve it immediately.
I love the spice profile of this chicken soup. It is going on my to do list for sure.
