Carrot Noodle Stir Fry
How many times has this happened to y’all?? Buy something new and use it countless times in the first few weeks. You then get tired of it and that thing gets dumped in a corner of your house. Suddenly out of the blue you find it and fall in love with it all over again. This is exactly what occurred with me and my spiralizer and the end result is this simple but tasty “CARROT NOODLE STIR FRY”. It is the perfect example of a few ingredients creating a burst of flavors on your palate.
When you make a move to a new city there are always things which tend to come out of the closet and grab your attention. These are things you actually liked a while ago but have completely forgotten recently. Suddenly after a long time they feel new again. It does feel like falling in love all over again (LAUGHS!!!).
This is exactly what happened with me and my spiralizer. I bought it at the beginning of last year and used it incessantly for the first couple of months including this Zucchini Noodles recipe posted on the blog. Then I got enamored with my new toy; my pasta machine and the spiralizer was soon forgotten until now. It was one of those days when wifey dear was doing some house cleaning and had the spiralizer out on the counter-top. I had just come back from the gym, hungry as hell and was in no mood to wait longer than 10 minutes to eat (CHUCKLES!!!).
In such a situation all I needed to do was spiralize some carrots, toss it with a little soy sauce, vinegar and sriracha and voila!!! I have a healthy and delicious Carrot Noodle Stir Fry. Its sweet, spicy, a little tangy and the perfect antidote for a growling stomach…
Using a spiral vegetable slicer, spiralize carrots into noodles. For all those who are worried about not having a spiralizer I would like to say. FEAR NOT!!! Just use a potato peeler. The noodles might look different but they will have the same great taste.
Heat oil in a skillet over medium heat. Add the ginger and stir-fry until aromatic. Add peppers, carrot noodles and cook, stirring frequently, until softened. Add in soy sauce, vinegar, sriracha and toss everything together with a pair of tongs for 3-4 minutes. Season with salt.
Remove to a plate and sprinkle chopped scallions, peanuts for extra crunch and sriracha if desired. Serve hot! I never imagined in my wildest dreams that a spicy, tangy version of carrots will taste good.. But trust me y’all they DO!!!

Ingredients
- 3 Carrots
- ½ large Green Bell Pepper
- ½ tbsp Soy Sauce
- 2 tbsp Vinegar
- 1 inch Ginger slices
- 1 tbsp Sriracha
- Oil
- 1 Scallions diced for garnish
- ¼ cup Roasted Peanuts for garnish
- Salt as per taste
Instructions
- Using a spiral vegetable slicer, spiralize carrots.

- Add peppers, carrot noodles and cook, stirring frequently, until softened.

I don’t have a spiralizer, and have wondered how much I’d use it. I should probably break down and buy one — to use on this dish. Sounds wonderful — thanks.
You should definitely try it John. It does open a whole lot of options as far as healthy recipes are concerned.. 🙂
What a healthy dish Rahul! My daughter would love this recipe, she loves maggie so I think I can substitute maggie with this healthy noodle fry.

Hahaha, it happens with me all the time, Rahul. Every time I buy something I use it so much, and as soon as that ‘new thing’ goes inside cupboard it doesn’t come out. Sometimes it even stays there for years! 😉 That’s the one reason why I have never bought a spiralizer. This carrot noodle stir-fry looks so delicious and flavorful.
Couldnt’ agree with you more Anu.. Its just one of those habits that is difficult to get rid off.. 🙂 Especially for me when I buy everything that has a discount on it..
Rahul, I was the same way with my wafflemaker – when I first got it several years ago, I used it AL THE TIME – then I set it aside and forgot about it – then a couple years ago I had a hankering for waffles and have been using that wafflemaker every weekend since!

Funny you should say that Shashi since I just got a good deal on my wafflemaker. Lets see how long it takes for me to dump it in storage so to speak… 🙂 As for the spiralizer then I do hope I use it for a while now…
