Quinoa Khichdi – A Healthy Nutritious Instant Pot Recipe
A Dal(lentil) khichdi is basically a one-pot meal in India made by pressure cooking rice and lentils with a few spices. Growing up I have always thought of it as being synonymous with hospital food. Mom made it only when I got sick since it was nutritious and it was easy on the stomach. The similarity to my situation now is that I am sick and I have to make khichdi just like the good old days. The difference now is the fact that my “QUINOA KHICHDI” recipe is made with the king of foods i.e. quinoa and is a delectably tasty treat.
A visit to the Dentist !!
It has been a miserable week for me and the reason for that is simple. The dreaded visit to the dentist. A lot of people may just agree with me when I say that this is one of the scariest visits one can make to any place (CHUCKLES!!!). The end result is either extremely painful or extremely hilarious for people taking you back home. The reason I say that is the fact that a video of you coming out of anesthesia and bawling stupidly much to some one else’s joy inevitably ends up on youtube. (LAUGHS!!!).
Now y’all might be thinking which category I fell into then it was unfortunately the painful one. It took a few hours for the anesthesia to wear off and then it all began. I don’t need to tell y’all that in a situation I have to restrict my diet to soft foods and the first thing I could possibly think off was straight out of my childhood i.e. khichdi.

But I was determined not to make it taste like baby food. So the first twist on the traditional recipe was the use of quinoa instead of rice. The next step was adding a variety of flavors to my khichdi. Don’t worry I am not going to throw the kitchen sink at this one. It’s just your regular spices like turmeric, coriander, dry mango powder etc.
One of the things I like to do is to temper spices and this recipe was no different. So I used cumin and mustard seeds as well as curry leaves as my tempering agents. Use the saute option in the instant pot when starting off with these spices. A dd frozen veggies, moong dal, quinoa and mix well. Finally to top it off add a little garam masala which puts a nice little bow on the recipe so to speak.. Cook the khichdi using the rice option on the instant pot. Ohh just in case I forgot to mention cook the recipe can be made in a pressure cooker as well.
Once it is done have the hot steaming quinoa khichdi with papad or spicy pickle on the side. Don’t y’all forget to let me know if I have changed the perception of the humble khichdi from hospital food to something much more appetizing???

Quinoa Khichdi
Equipment
- Instant Pot
Ingredients
- 1 cup Quinoa
- ½ cup Moong Dal
- ¾ cup Frozen Veggies
- 1 small Onion
- 2 tsp Ginger-Garlic-Chili paste
- 1 tsp Cumin Seeds
- ½ tsp Mustard Seeds
- 6 Curry Leaves
- ¾ tsp Turmeric
- ½ tsp Coriander Powder
- 1 ½ tsp Garam Masala
- 1 tsp Paprika
- 3 cup Water
- Salt as per taste
- 1 tbsp Ghee
Instructions
- Heat ghee in the instant pot. Start off with the saute option
- Add cumin seeds and mustard seeds. Once they splutter add curry leaves.
- Mix in and saute ginger garlic paste and onion for few mins.
- Add frozen veggies, moong dal, quinoa and mix well.
- Sprinkle in the turmeric, coriander powder, garam masala, paprika and salt. Mix well.
- Pour water and mix. Cook using the preset rice option
- Serve hot.

No this doesn’t need to be pressure cooked. Just cook it like your regular upma. As far as the measures are concerned then you can definitely use the rice measures.
This is some really interesting “sick” food. When I was sick, my mom gave me flat ginger ale, for some reason. I’d much rather have had this quinoa dish!
