Sweet Potato Hot Dogs

At times there is an instant connection with a long lost cousin or a distant relative that you have just met. It just feels as if you have known the very same person for years. I had a very similar experience but in the world of food. It happened when I discovered a distant relative of the humble “POTATO”. Yes!! I am indeed talking about the relatively unassuming ‘SWEET POTATO”. The connection was instantaneous and the end result; lipsmackingly delicious “SWEET POTATO HOT DOGS”!!!!

This week my colleagues and I did finally move into our new workspace so things have been absolutely crazy. The lab feels like a second home these days. All of us have been spending fifteen-hour workdays constantly unpacking boxes. It got to the point where someone commented that she felt like it was a Christmas nightmare where you do not like any present that you open (CHUCKLES!!!).

We were at it even yesterday when we decided to take a break and go out for lunch at a nearby burger place. Seeing the eclectic décor and menu I tried something different. That turned out to be a whimsical burger and sweet potato fries. The burger was absolutely juicy and succulent. What I was more impressed with was the fries, which to me were absolutely divine. It is these very fries which are the inspiration for this recipe.

I will never get over my craving for game day food. Nothing says game day food than burgers and  “HOT DOGS”. For a reason I cannot fathom I decided to make meatless hot dogs with the ubiquitous spud and a bunch of veggies. The problem is when I went grocery shopping the lingering taste of the fries from the previous day made me buy the sweet potatoes instead (LAUGHS!!!).

Clean the sweet potatoes under running water. Pierce the sweet potato skin 6-8 times. Place it in a bowl/plate and microwave for 6 minutes, rotating halfway through. Let it cool, remove the skin and mash the sweet potatoes. In a bowl combine mashed sweet potatoes, cooked corn and green peas, shredded carrots, ginger garlic paste, cumin powder, coriander powder, garam masala, rice flour, cilantro and salt. Mix.

Scoop equal amounts of the mixture with an ice cream scoop and gently press it around the skewers. Cook the skewers on the skillet till golden brown on the outside. Now it is time for y’all to go nuts as far as the sauces and toppings are concerned. As for me I made two sauces. A tangy mint chutney as well as a buffalo sauce recommended by a fellow blogger. 

Sweet Potato Hot Dogs

Take a hot dog bun. Add the dogs. Drizzle with mint chutney &/Or buffalo sauce. Add toppings of your choice and DIG IN!!!!

Ingredients
  

Hot Dogs

  • 2 Sweet Potatoes
  • cup Corn cooked
  • cup Green Peas cooked
  • cup Carrot shredded
  • ½ tsp Cumin Powder
  • ½ tsp Coriander Powder
  • ¾ tsp Garam Masala
  • 1 tsp Ginger Garlic Paste
  • 3 tbsp Rice flour
  • Cilantro
  • Salt to taste
  • Oil
  • Hot Dog Buns
  • 4 Skewers

Mint Chutney

  • ¼ cup Yogurt
  • cup Fresh Cilantro
  • ½ cup Mint Leaves
  • ½ Jalapeno
  • tbsp Lemon Juice
  • Salt to taste

Buffalo Sauce (Optional)

  • cup Hot sauce
  • ½ cup Melted butter

Instructions

Cilantro Mint Sauce – Pulse all the ingredients in a food processor.

    Buffalo Sauce (Optional) – Mix hot sauce and melted butter in a bowl.

      • Take a hot dog bun. Drizzle with mint chutney & or buffalo sauce. Add the dogs.
      • Add toppings of your choice and DIG IN!
