Mini Butter Chicken Pizza

Lets talk about our favorite foods, our guilty pleasures so to speak. It is the one dish whose mere mention gets our taste buds salivating in no time. The wonderful aroma of this dish will draw you in from almost a mile away. You are impatient to eat it the moment you lay your eyes on it. One bite of it will send you to food heaven. Aren’t you mouthwatering yet?? Well I sure am and the reason for that is simply one word beloved my millions around the world: PIZZA. I knew I wouldn’t be satisfied with just one so I broke it down into these adorable MINI BUTTER CHICKEN PIZZAS.

The word Pizza existed in my dictionary but I had succeeded in keeping a safe distance from it till about two years ago. That was when I made this big life-altering decision and my life changed (I am still wondering whether its for the good or bad… LAUGHS!!!!). I got married to SHE WHO SHALL NOT BE NAMED (P.S that’s what I call my wife behind her back.. LAUGHS HARD). She absolutely loves pizzas and just cannot get enough of them. I am going to let all of y’all in on a secret; every time she gets mad at me I make her a pizza and everything magically gets back to normal. That is the only reason I have grown to love pizzas in the last couple of years (LAUGHS!!!).

I made this recipe simply because my wife asked for it. I believe HAPPY WIFE EQUALS A HAPPY LIFE so she should always be obeyed (LAUGHS!!!). The thing is before the big GANESH festival in September she is going to observe the month of shravan, which calls for not eating any meat for about a month. So I decided to give her what I call a meat treat. The recipe was a no-brainer because I simply took my favorite meat dish “BUTTER CHICKEN” and used it as a topping on her favorite dish “PIZZA”. If only all the recipes were that easy!!!!

Lets get started on the chicken first. Cut the chicken thighs into small pieces and season with salt and pepper. Shallow fry the chicken pieces on a skillet or a non-stick pan till golden brown on both sides.Once it cools, use a fork or your hand to shred it.

Heat butter in a pan, add ginger-garlic paste and the jalapeno and cook for 2 minutes over medium heat. Then add the onions and sauté till golden. Now mix in the star of the show; the tomatoes, and cook till soft. Toss in the dry spices: coriander powder, garam masala, red chili powder, turmeric, salt, along with the cashews and cook for 5 to 7 minutes. Keep aside to cool. Transfer it in a food processor, add heavy cream and make a fine paste.

To my wife’s absolute joy the quality of my pizzas seems to be improving. The secret to that has been getting the pizza dough just right. One change I have made from my past pizza recipes is that I have started using instant yeast which eliminates the need to rest the dough. I followed the instructions on the yeast packet to make the dough. So simply mix the flour, sugar, salt, yeast, water and knead to form a soft dough. The key to making a great crust is the proper kneading technique. The technique is folding and kneading with the heel of your palm till the dough is smooth and elastic. Apply oil on the dough. 

At this stage the entire dough can be used to make one giant pile of deliciousness….. I mean one pizza!!!!

OR You can do what I did. i.e have 5 times more fun for the price of one!!! I divided the dough into 5 equal pieces and made 5 mini pizzas.

Turn the dough out on a lightly floured surface and stretch to desired thickness. Prick the base with fork to avoid bursting. Evenly spread the sauce and top with the shredded chicken and any toppings of your choice. I made some with huge helpings of cheese and some with green peppers. Y’all can let your imagination run wild. On a side-note the chicken by itself is delicious so try it on its own too!!! This is what I mean by having 5 times more fun… One pizza dough and multiple different toppings. Isn’t that a great idea for your kids lunchboxes!!!!

Bake in the oven at 350 F for 20 mins until crust is golden brown. Repeat the process for the remaining portions to get these flavorful baked goodies.

These little freshly made mini pizza bites are loaded with rich, creamy, luscious butter chicken.

Ingredients
  

Pizza Crust

  • 2 cup All Purpose flour
  • Packet of Instant Yeast
  • 1 tsp Sugar
  • ½ tsp Salt
  • ¾ cup Water

Chicken

  • ¾ lbs Chicken boneless skinless thighs
  • ½ tsp Black Pepper Powder
  • Salt as per taste
  • 2 tbsp Butter
  • 1 large Onion
  • 2 tsp Ginger Garlic paste
  • 3 large Tomato
  • 10 Cashews
  • 1 Jalapeno
  • ¼ cup Heavy Cream
  • 1 tsp Garam Masala
  • ¾ tsp Turmeric
  • tsp Coriander Powder
  • 1 tsp Red Chili Powder
  • Salt as per taste

Toppings (Your choice)

  • ½ Green Pepper cut into strips
  • Cheddar Cheese

Instructions
 

Chicken

  • Heat a skillet over medium heat. Then cook the chicken in batches till golden brown on both sides and cooked through.
  • Once it cools, use a fork or your hand to shred it.
  • Heat butter in a pan, add ginger-garlic paste and jalapeno and cook for 2 minutes. Add onions and sauté till golden.
  • Mix in the tomatoes and cook till soft. Toss in the dry spices: coriander powder, garam masala, red chili powder, turmeric, salt, along with the cashews and cook for 5 to 7 minutes. Keep aside to cool. Transfer it in a food processor add heavy cream and make a fine paste.

Pizza Dough

  • Mix the flour, sugar and salt. Add the yeast to this mixture and knead slowly to form soft dough.
  • The key to making a great crust is the proper kneading technique. The technique is folding and kneading with the heal of your palm till the dough is smooth and elastic.
  • Apply oil on the dough. Divide it into equal portions

Assembly

  • Turn the dough out on a lightly floured surface and stretch to desired thickness. Prick the base with fork to avoid bursting.
  • Evenly spread the sauce and top with the shredded chicken and the toppings of your choice
  • Bake in the oven at 350 F for 20 mins until crust is golden brown.
  • Slice and enjoy.
