This week began with not just the deep South but pretty much the entire East coast bracing for the inevitable; i.e winter storm Helena. With below freezing temperatures for the better part of two days a good ol cup of Joe was our constant companion. Finally there came a time during the day when that cup of Joe was going to feel lonely on our table (CHUCKLES). That’s when I decided to shake things up a bit with these crisp hot-of-the fryer “Kale Mathri – Easy Homemade Whole Wheat Kale Crackers”.

Yess. Y’all heard it right people!!! I did say KALE crackers.. Having lived in the South for about 10 years I am actually quiet obsessed with a variety of greens, especially collards and kale. Even wifey dear who hasn’t spent as much time as I have in the South fondly shares my obsession. I think y’all would agree that this is actually not a bad thing to be crazy about. The greens are not only a good source of essential nutrients but are very versatile ingredients as well.

They are so versatile that they make great tea-time snacks which in turn makes for a good blog post (CHUCKLES). Instead of making the standard tea-time snacks like Pakoras (Fritters) I was in the mood of something different. I firmly believe that if you cannot think of something completely new then just use tried and trusted ingredients in a slightly different way. Which is exactly what I did in making these piping hot Kale Crackers.

Easy Homemade Whole Wheat Kale Crackers

To begin with combine chopped kale leaves, whole wheat flour, gram flour, red chili powder, sesame seeds, fennel seeds and salt in a bowl.  Add hot oil and mix with the spoon. Once it is cool mix everything together with your hands till it looks like breadcrumbs.

Add water little at a time and mix. Knead slowly to form a semi stiff dough. Divide the dough in equal parts. On a floured surface roll the dough in a thin circle with a rolling pin. With a cutter, cut out circular crackers in the dough. Remove the extra dough and add it to the unused dough. Prick each cracker with a fork so that they wont puff up.

Gently slide 3 to 4 crackers into the hot oil in a frying pan and fry till golden brown on both sides. Drain on absorbent paper. 

Tips to make Crispy Kale Crackers

  • The dough should be semi stiff.
  • Prick the crackers or else they will puff .
  • Fry on medium heat.
  • Drop a piece of dough to test the oil temperature before frying. The dough should gradually rise up.

Variations to make Mathri?

I have used kale, you could also use fenugreek leaves.

The Kale crackers are popular tea time snack. Taste amazing on their own or can be enjoyed with your cup of joe. It also pairs perfectly with salsa, hummus, cheese, or with any dipping sauce..

How to store homemade crackers

Allow the kale whole wheat crackers to cool completely before storing. Store in an air tight container at room temperature. Stays fresh for about 2-3 weeks. Although ours disappeared long before then! Because of their longer shelf life, you can make these crackers well in advance.

Ingredients
  

  • 1 cup Kale Leaves cut the stem and chop fine

  • Water as required
  • Oil for frying
