If someone had said to me that not only would I have my own food blog but I would be running it for a full year then I would have laughed for a full minute before saying that you are out of your freaking mind (LAUGHS!!!) Unbelievably that is exactly what has happened because its my blog’s FIRST BIRTHDAY today.. The best way to celebrate a birthday as everyone knows is CAKE… WAIT A MINUTE!!! I am a lousy baker so I am going to turn to the next best thing… ICE-CREAM.. Not just any ice-cream but Cookies ‘N Cream Icecream with my favorite chocolate chip cookies…

On the day I started this blog I felt like I was beginning one big adventure and I can tell y’all its been one heck of a ride so far. In the beginning I basically had no idea what I was doing which led to me being completely overwhelmed. Luckily I had great help; a fellow blogger who was my knight in shining armor so to speak. He literally did everything to help me get my blog up and running. It felt like if I had a problem, then he had the solution. Then there was my wife whose been there by my side every step of the way. Whether it is helping me with the prep work, taking pictures or trying to grow the blog on social media she has been there and done that.

All this has led to some really amazing experiences. Blogging is such an incredibly diverse world that has allowed me to meet people from all over the world. But the best feeling comes from people who tell you that they tried your recipes and liked it. I got the perfect gift just yesterday when someone tried one of my recipes and sent me a picture to tell me how much they loved it. It is moments like this, which give me the most joy. These fun times call for a party RIGHT!!! For me the two best ways to celebrate BIRTHDAYS are CAKE and ICE-CREAM!! The problem is I cannot bake to save my life so I am going to do ICE-CREAM which isn’t a bad alternative. RIGHT!!!!.

It seems to me like I have been trying to perfect the ice cream recipe for years (CHUCKLES!!!). The problem is my mom made the world’s best ice-cream (AT LEAST FOR ME!!!) without using any ice cream maker and I am obsessed with doing the same. I know, I know nobody can make food like their mom but I can at least try. After what seems like million attempts (LAUGHS!!) I think I have finally hit gold.

I found the original recipe on a great website called thekitchn.com. The problem may be the ingredients or something else but it did not come out the way I would have like so I tweaked it just a bit.

All that is needed to make the ice cream base is two ingredients; heavy cream and condensed milk.

Initially whip up the heavy cream with hand mixer for 5 minutes until stiff peaks form. Gently fold in whipped cream little at a time with the condensed milk. Most of the recipes incorporate the toppings at this stage and then freeze it overnight. When I did it I found that the ice cream consistency was somewhat thick instead of fluffy.

So like a mama’s boy that I am I listened to my mom and froze the base without adding any flavor.

Next day remove the ice-cream from freezer let it come to room temperature. Beat it again with a hand mixer. This is what helped add the required fluffiness to my ice cream. Once done add in your favorite cookies. I love me some chocolate chip cookies so I crushed a bunch and added them to my ice cream. I couldn’t resist and added some chocolate chips for extra chocolatey goodness!!!. Instead y’all can add chunks of any biscuits/ cookies to get a different texture.

Cover and freeze for 6 hours. Enjoy !!! As for me I finished off the entire batch of  Cookies ‘N Cream Icecream in one go just like I used to when I was in college.. REMEMBER THAT MOM!!!!!

Easy to make, refreshing homemade Cookies ‘N Cream ice-cream to help you beat the heat.

Ingredients
  

  • 2 cups Heavy Cream
  • 1 can Condensed Milk 14ounces/400ml
  • 10 Cookies crushed
  • ½ cup Chocolate Chips optional

Instructions
 

  • Whip heavy cream with a hand mixer for 5 minutes until stiff peaks form.
  • Gently fold in the whipped cream little at a time with the condensed milk.
  • Transfer the ice-cream in a container and freeze overnight.
  • Next day remove the ice-cream from freezer and let it come to room temperature. Beat it with hand mixer for about 5 minutes. Once smooth swirl in crushed cookies and chocolate chips.
  • Cover and freeze for 6 hours.
  • Enjoy !!!
