Chicken Tacos

Ahh; My much needed vacation is here. I must say its been a long time coming. The job has been extremely hectic and fast-paced and this is a break that I sorely need to recharge my batteries. I have to thank my sister in law who is visiting us all the way from India for allowing me to take a vacation. So don’t y’all think that she deserves a treat??? The answer to that is a resounding yes and it starts right now with these Chicken Tacos.

It took me almost a month but I finally made it back.. I missed y’all so much. And what a crazy time its been!!! I have absolutely no words to describe it. But I am going to try and do it anyways… (WINKS!!!!) It all started with my sister-in-law coming over all the way from India last month which was also the day I made these tacos. It was just my way of making her feel at home that day because for the next 3 weeks she was going to get a taste of all the good things that New York, San Antonio and Austin had to offer.. (LAUGHS!!!)

First up was New York, Manhattan to be more specific which is gorgeously decked out at this time of the year. And the whole week was surely did not disappoint.It was one highlight after another for my dear sister in law. Next up was Austin and San Antonio which was a sea change from New York but  the fun factor was right up there. And of course when you have two sisters together how can you not take them shopping!!!! So yours truly had to suffer silently through that too.. (LAUGHS HARD!!!)

Being the dedicated soldier that I am, I was actually trying to post on the blog all through this but I failed miserably (CHUCKLES). Once the vacation ended it was back to the grind of work and the pressure was on. My lab is going to be moving to Birmingham, Alabama so there was so much left to be done. It took me another week to catch up but here I am. Now I think its time I shut up and start talking about the food. SO here goes.. 

Surely y’all will agree when I say that nothing beats the taste of homemade tortillas. You can find a step by step tutorial on the dough making process right HERE.

Next up was the filling. I decide to cook the chicken with flavors of my home town. Heat a pan on medium heat. Add oil and saute chopped onions until brown. Separately dry roast the grated coconut till you smell the aroma. Allow all the above mixtures to cool. Blend the roasted onions, coconut and garlic in a food processor into a fine paste using a little water. 

Heat oil in a pan on medium flame. Add ginger garlic paste, poppy seeds and coconut onion paste and saute till the oil is visible on the edges. Add chicken and cook until the color of the meat starts to change. Add tomato puree, red chili powder, paprika, turmeric powder, garam masala and mix well. Cook for about 10 minutes. Stirring frequently. Season with salt, lemon juice. 

Chicken Tacos

For assembly fill each tortilla with chicken mixture. Top it with apple which helps cut through the spiciness of the chicken. Dive into it immediately.

Y’all may feel that I came back for only one week only to disappear again. This is because Maddy and I are leaving Dallas for Birmingham next week. So the next couple of weeks are going to be spent moving and settling into our new homes. Wish us luck Y”ALL…

A fresh homemade tortilla filled with Spicy Chicken & topped with Green Apples.

Ingredients
  

Tortilla

  • 1 ½ cup All purpose flour
  • ½ tsp Baking powder
  • ¼ cup Butter
  • 1/3 cup water
  • Salt

Filling

  • 1 pound Chicken Thighs Diced
  • 3 tbsp Ginger Garlic Paste
  • 2 Garlic Cloves
  • ½ cup Dried Grated Coconut
  • 1 medium Onion chopped
  • ¼ cup Tomato puree
  • 3/4 tsp Poppy Seeds khus-khus
  • 2 tsp Red Chili Powder
  • 1 tsp Paprika
  • ½ tsp Turmeric Powder
  • 1 ½ tsp Garam Masala
  • 1 tbsp Lemon Juice
  • Apples
  • Salt to taste

Instructions
 

Tortilla

  • In a large bowl, combine the flour, salt and baking powder uniformly. Incorporate butter into the flour till the mixture looks like breadcrumbs.
  • Add water little at a time and knead slowly to form soft dough.
  • Transfer the dough to a well-floured surface; knead with the heel of your palm. The dough should feel supple and smooth.
  • Divide the dough into 8 equal portions. On a floured surface, roll out each portion into thin round.
  • Heat a non-stick griddle and cook the tortilla on a low fame till pale golden brown spots appears on both the sides.
  • Remove from pan and keep in a covered container.

Filling

  • Heat a pan on medium heat. Add oil and saute chopped onions in the pan until brown. Separately dry roast the grated coconut till you smell the aroma. Allow all the above mixtures to cool.
