Potato Cutlets or “ ALOO TIKKI “ as it is locally called is a very popular snack in the Indian Subcontinent. It is made up of mashed potatoes, onions and a variety of different spices. You take this delicious nugget of spicy goodness, put it in between two pieces of bread, add toppings of your choice and voila!!! It transforms into everyone’s favorite food, “ the BURGER”. And YES!!! It is a veggie burger but do not let that deter you from having a go at it. Simply take one bite and you will be hooked on it for life.

October 1 is annually celebrated as “World Vegetarian Day” and hence marks the beginning of  “ Vegetarian Awareness Month” which lasts till November 1 OR “World Vegan Day”. I was actually reminded of this very important day by a very good friend of mine who happens to be a vegetarian herself. We have known each other for a long time but found it difficult to keep in touch due to our busy lifestyles.

The last time I spoke to her was several months ago at a conference in Washington DC. After a long time we reconnected and it was pure coincidence that the day happened to be World Vegetarian Day. She made me aware of the significance of this day and started reminiscing about our last meeting and this hilarious incident when she almost ended up eating meat.. After the conference ended the two of us went to dinner with a few of our friends. Being the only vegetarian in the group she did not find any good options on the menu so she opted for the cheeseburger instead. She was about to eat it when yours truly ran to her rescue like a knight in shining armor (CHUCKLES) and stopped her. To this day we both have a good laugh about it.

Our talk actually turned out to be the inspiration for me to come up with this recipe. I wanted to make a veggie burger but I needed it to be different. So it all boiled down to a choice between two popular Mumbai street snacks “VADA PAV” (which I have already made) & “ ALOO TIKKI “ (hence the winner). These tikkis or cutlets involve making burger patties with flavored mashed potatoes and onions and pan-frying them for a crisp golden brown exterior. We Indians obviously like spicy food so I couldn’t resist adding a little Sriracha to the mayo.

Enjoy world vegetarian day with this lip-smacking “ Aloo Tikki Burger “.

Saute the onions and jalapeno in one tbsp of oil. Add cumin powder, red chili powder, chat masala, turmeric powder and mix. Add potatoes, corn flour and salt and mix mashing the potatoes some more. Set aside to cool.

Divide the mixture into six equal portions. Shape them in round patties. One of the portions got lost in one of my crazy experiments so there are only 5 in the picture below !!!!!

Heat oil in a non-stick pan and fry the patties till they turn golden brown on both the sides. Drain onto absorbent paper.

Make the sriracha mayo by mixing the two together.Cut each burger bun horizontally and apply the spicy mayo to the bottom half. Top the bun with a tomato slice, patty and cheese and place it in the microwave to melt the cheese slightly. Then the coup de grace is the chips for an extra crunchy burger..

Serve with french fries. This simple yet mouth-watering burger is to die for.

Burger bun filled with crispy potato patty flavoured with Indian spices and topped with cheese, tomato slice and chips.

Ingredients
  

For the Patty (Tikki)

  • 4 Potatoes boiled & peeled
  • 1 Small onion finely chopped
  • 1 Jalapeno finely chopped
  • 1 tbsp Corn Flour
  • ½ tsp Cumin powder
  • ½ tsp Red Chili Powder
  • ½ tsp Chat Masala
  • ¼ tsp Turmeric Powder
  • 2 tbsp Lemon Juice
  • Salt: To taste
  • Oil

For Spread

  • 4 tablespoon Mayo
  • 1 teaspoon Sriracha Hot Sauce

For Topping

  • 1 Slice Pepper Jack Cheese of your choice
  • 1 Slice Tomato
  • Potato Chips

Instructions
 

  • Heat one tbsp oil in a pan. Add onions, jalapeno and saute for 3-4 minutes.
  • Add cumin powder, red chili powder, chat masala, turmeric powder and mix.
  • Finally add potatoes, corn flour, salt and mix mashing the potatoes some more.
  • Set aside to cool.
  • Divide the mixture into six equal portions. Shape them in round patties.
  • Heat the oil in a sauté pan and fry the patties till they turn golden brown on both the sides.
  • Cut each burger bun horizontally into two.
  • Make the sriracha mayo by mixing the two ingredients together and then apply ot on the bottom bun.
  • Top the bun with the tomato, potato patty and cheese & place it in a microwave to melt the cheese.
  • Finally place some potato chips over it.
  • Serve with french fries.
